Ingredients

Units Scale
  • 1 egg yolk
  • 1 tsp dijon mustard
  • 1/2 cup vegetable oil
  • 1/2 cup parmesan cheese
  • 1 1/2 tsp fresh lemon juice
  • 1/2 tsp brown sugar
  • 3 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 anchovy, minced

Instructions

  • In a glass or ceramic bowl add egg yolk and mustard.  Whisk for 20 seconds.
  • While whisking vigorously, add vegetable oil in a slow, steady stream until thickened. *
  • When thickened, add in remaining ingredients and whisk to incorporate.

Notes

*If it does not thicken, or it breaks (gets oil looking), start over.

 

You can pasturize your egg if wanted (optional) prior to making this recipe. Place egg in a small saucepan & cover with water.  Heat over medium heat until it reaches 140 degrees.  Maintain temperature for 3 minutes.  Rinse under cold water & use as desired.
