Ingredients

Scale
  • 1 peeled & medium diced sweet potato
  • 1.5 Tbsp olive oil
  • 1/2 each seeded & julienne red & green bell pepper
  • 1/2 peeled & julienne yellow onion
  • 1/2 lb Monterey jack cheese, shredded
  • 1/2 (15 oz) can refried black beans
  • 2 c cooked rice
  • 1 oz butter, cut up
  • Tortillas
  • salt & pepper to taste

Sauce:

  • 1/2 finely minced chipotle pepper in adobe sauce
  • 3/4 c ranch dressing

Instructions

  • Preheat oven to 400F.
  • Spread out the sweet potatoes on a sheet tray lined with parchment paper and drizzle olive on and season with salt & pepper. Bake in the oven for 15-18 minutes or until lightly browned and tender. Set aside.
  • Add a bit of olive oil to a large frying pan over high heat and saute the peppers and onions for 4-5 minutes or until lightly browned. Set aside.
  • Sauce: add the chipotle pepper and ranch to a small bowl & mix until combined. Cool before serving.
  • To prepare: Add a small amount of butter to a large frying pan or a griddle over medium heat.
  • Add 1 tortilla and evenly spread the beans over tortilla. Cover the beans with some white rice and top off with peppers, onions, sweet potatoes and cheese. Add other tortilla (or spread on half and fold over tortilla) and turn to other side and cook on both sides until evenly browned.
  • Remove from skillet, slice & serve with sauce.
