Ingredients

Scale
  • 15 oz bottle/can artichokes, drained & sliced
  • 1 lb cream cheese, room temp
  • 8 oz mascarpone cheese, room temp
  • 1 Tbsp all purpose flour
  • 1 c Parmesan cheese, grated
  • 1/4 tsp fresh thyme leaves
  • 1/4 tsp crushed red pepper
  • 1 Tbsp flat leaf parsley chopped
  • 1 garlic clove, minced
  • 5 green onions, chopped
  • salt & pepper to taste
  • 16 oz pack fresh spinach, chopped

Instructions

  • Preheat oven to 325F.
  • Mix all ingredients in a large bowl.
  • Spray baking dish with non-stick spray; fill pan with mixture. Bake at 325F for about 25 minutes or until bubbling and center is hot.
  • Optional: drizzle bread you will eat it with – with extra virgin olive oil. grill bread on both sides.
  • Sprinkle dip with parmesan cheese & serve hot with grilled bread.
