Prep Oven and Pan: Adjust an oven rack to the lowest position. Preheat the oven to 325F. Place a roasting rack inside a large roasting pan.
Make Mayo Rub: In a medium bowl, stir together the mayonnaise, paprika, dried parsley, garlic powder, dried thyme, ground sage, hot sauce, 2 tablespoons of salt, and 2 teaspoons of black pepper. Set this mixture aside.
Prep Turkey: Remove any giblets or neck parts from the turkey cavities (reserve for gravy if desired). Thoroughly pat the turkey dry, both inside and out, using paper towels.
