Ingredients for Salad:

  • 6 c spring mix lettuce
  • 2 c spinach, chopped
  • 1 red apple, cut into strips
  • 1 pear, cut into strips
  • 1/2 c dried cranberries
  • 1/2 c chopped candied pecans
  • 1/2 c crumbled feta cheese
  • 1/2 c pomegranate seeds
  • 1 avocado, chopped

Ingredients for Dressing:

  • 1/3 c olive oil
  • 2 Tbsp honey
  • 2 Tbsp apple cider vinegar
  • 2 tsp Dijon mustard
  • 1/2 tsp cinnamon
  • salt & pepper to taste

Instructions

  • Add all of the salad ingredients to a bowl, drizzle the dressing on top & toss to mix.
  • To make it ahead of time: wait to add the apple, pear & dressing until just before serving.
  • Adjust as you’d like. Examples: add in grilled chicken, replace feta cheese with blue cheese, etc.

Notes

  • Get creative with fruits and nuts that you want to add to this delicious salad!
