Ingredients

Scale

Ingredients for savory version:

  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 cup sifted all-purpose flour
  • 1 cup infused milk (below)
  • salt for after frying
  • vegetable oil for frying

Milk Infusion:

  • 1 c milk
  • 1/4 onion (cut in chunks)
  • 1 parsley stalk
  • 1 bay leaf
  • 1 tsp black peppercorns

Ingredients for sweet version:

Same as above but omit infused milk & use 1 cup plain milk and then add

  • 1 Tbsp white sugar
  • 1 tsp vanilla
  • confectioners’ sugar for dusting or put immediately into cinnamon sugar mixture while oil is hot on them

Instructions

Steep milk

  • Add ingredients and put in saucepan on medium heat.  Bring to simmer and let cook for 15-20 minutes.  Strain milk from other added ingredients and keep milk – letting it cool.

Making rosettes

  • In a bowl beat eggs, sugar, and salt together in a large bowl. Add other ingredients depending on if you are making savory or sweet; beat until smooth.
  • Heat oil in a large, deep skillet to 375 degrees F (190 degrees C). Place a wire rack over paper towels.
  • Heat the rosette iron in hot oil for 2 minutes. Lift the iron and let excess oil drain. Dip the iron in batter to 1/4 inch from the top of the iron, then dip the iron immediately into hot oil.
  • Fry rosette in hot oil until golden, about 30 seconds.
  • Lift the iron out; tip upside down to drain. Use a fork to push rosette off the iron onto the prepared wire rack.
  • Reheat the iron in hot oil for 1 minute; cook remaining batter. Sprinkle rosettes with salt (if savory) or confectioners’/cinnamon sugar (if sweet).
