Ingredients for Sliders:

  • 1 lb lean ground beef
  • 1/2 c pitted & chopped sweet cherries
  • 1 egg
  • 1/4 c chopped onion
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp Dijon mustard
  • 3/4 tsp garlic salt
  • 1/2 tsp pepper
  • lettuce leaves (small for sliders)
  • small dinner rolls

Ingredients for Avocado Salsa:

  • 1/2 c pitted and chopped sweet cherries
  • 1/2 c chopped tomato
  • 1 avocado, pitted & coarsley mashed
  • 2 Tbsp chopped green onion
  • 1/4 c chopped Anaheim chile
  • 1 Tbsp balsamic vinegar
  • 1/2 tsp garlic salt
  • 1/4 tsp pepper

Instructions

  • Preheat oven to 350.
  • In a bowl, mix ground beef, cherries, egg, onion, parsley, mustard, garlic salt and pepper.
  • Form into 16 meatballs; place on a rack in a broiler pan.
  • Bake for about 20 minutes or until the juices run clear, turning the meatballs halfway through the baking time.
  • To prepare the salsa, combine all ingredients in a bowl & stir to blend.
  • Gently toss hot meatballs with 1/2 cup salsa.
  • Place 1 meatball and 1 lettuce leaf & a small spoonful of salsa on each roll.
  • Serve any remaining salsa on the side. Makes 8-16 servings.

Notes

  • Can substitute prune plums as an alternative to the sweet cherries.
