Sourdough Crackers

These Sourdough Crackers are the perfect way to use up your sourdough starter discard and satisfy your craving for a crispy, flavorful snack.

Ingredients
- 2/3 c unfed sourdough starter discard (150 grams)
- 3 Tbsp unsalted butter, melted
- 1/4 tsp salt
- 1 C all purpose flour (120 grams)
- 3/4 c shredded cheese (optional)
- olive oil to top
- coarse sea salt to top
- dried herbs (optional)
Instructions
- In a large bowl combine discard starter, melter butter, salt, and flour (*we added cheese as well). Mix and fold together until no dry flour remains. The dough will be very stiff.
- Cover and let the dough rest for at least 30 minutes or up to 2 hours.
- After dough rests, preheat oven to 375 and prepare a baking sheet lined with parchment paper.
- While the oven is preheating, roll out the dough onto a lightly floured work surface to about 1/8″ thickness, the size of a thin cracker.
- Brush the top of the dough with an even, light layer of olive oil. Sprinkle with coarse sea salt and any other desired herbs of choice.
- Cut dough into 1 inch square & place on the prepared baking sheet, leaving a small space between each cracker.
- If you don’t prefer the crackers to lightly puff up as much, prick each cracker with a fork 2 times, otherwise leave as is.
- Bake for about 12-15 minutes, or until lightly golden brown. (Watch them closely so they do not over bake!)
- Cool completely then store in an airtight container.
Notes
- Get creative with your flavors – this cracker is VERY forgiving!
