Ingredients for Chicken:

  • 2 boneless chicken breasts
  • 2 egg whites
  • 2 tsp cornstarch
  • Juice of 1/2 lemon or lime
  • 1 c coarse dry bread crumbs
  • 1 Tbsp chopped fresh parsley
  • 1 tsp salt
  • 1/4 tsp pepper
  • zest of 1 lemon, minced
  • 4 Tbsp olive oil

Ingredients for Alfredo:

  • 16 ounces fettuccine
  • 6 tablespoons salted butter
  • 1 tablespoon garlic, minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1 1/4 cup heavy whipping cream
  • 1 1/2 cup whole milk
  • 1 cup parmesan cheese, shredded
  • fresh parsley, finely chopped

Instructions

Directions for chicken:

  • Preheat oven to 450. Prepare chicken by cutting in half and pounding.
  • Blend egg whites, cornstarch and lemon juice in a wide shallow dish.
  • Combine bread crumbs, parsley, salt, pepper, and zest in a second wide, shallow dish. Crust chicken breasts. Let chicken rest at room temperature for 20-30 minutes to set crust.
  • Saute chicken in oil in a large nonstick, ovenproof skillet over medium-high heat until golden brown & crisp (about 3 minutes). Turn with a spatula & transfer the skillet to the oven to finish cooking. Roast chicken just until done, about 8 minutes more.

Directions for Alfredo:

  • Cook pasta per package directions, drain 7 set aside.
  • In a large skillet over medium heat, add butter and let it melt. Add minced garlic, garlic powder, and salt. Whisk together to combine.
  • Sprinkle the flour over the butter and garlic mixture. Whisk together and then slowly add the heavy cream and milk while whisking. Let sauce begin to boil and then reduce heat to low and allow it to simmer for 2 to 3 minutes.
  • Add parmesan cheese and whisk together.
  • Add the cooked and drained fettuccine. Use tongs to toss the pasta in the sauce.
  • Garnish with fresh parsley and serve.
