Ingredients

Scale
  • 1 1/2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 2 celery stocks, finely chopped
  • 2 carrots, finely chopped
  • 1/2 lb ground beef
  • 1/2 lb ground pork
  • 1/2 finely diced cooked bacon
  • 1/2 cup dry red wine (sub water or beef broth/stock)
  • 2 beef bouillon cubes, granules or base
  • 28 oz can crushed tomatoes
  • 2 Tbsp tomato paste
  • 2 tsp white sugar
  • 2 tsp Worcestershire sauce
  • 2 Tbsp basil leaves
  • 1 tsp dried oregano
  • 2 dried bay leaves
  • 2 sprigs fresh thyme (or 1/2 tsp dried thyme)
  • Salt and pepper

Serve with: cooked spaghetti noodles and Parmesan cheese

Instructions

  • Sauté Vegetables: Heat oil in a large pot or deep skillet over medium-high heat. Add onion, celery, carrots, and garlic. Cook for 3 minutes, or until softened and lightly golden.

  • Brown Beef: Increase heat to high. Add beef and cook, breaking it up with a spoon, until browned.

  • Deglaze with Wine: Add red wine to the pot. Bring to a simmer and cook for 1 minute, scraping the bottom of the pot to deglaze.

  • Simmer: Add remaining ingredients (except salt and pepper). Bring to a simmer, then reduce heat to medium and cook uncovered for 20-30 minutes, stirring occasionally. Add water as needed to maintain desired sauce consistency.

  • Slow Simmer Option (Optional):

    • Add 3/4 cup of water to the pot.
    • Cover and simmer on very low heat for 2-2.5 hours, stirring every 30 minutes.
    • Uncover and simmer for an additional 20 minutes to thicken the sauce.
  • Season and Serve:

    • Adjust salt and pepper to taste.
    • Serve over spaghetti and top with cheese.

Notes

  • Serve with whatever pasta you prefer – spaghetti is typically used & sprinkle with a healthy dose of Parmesan cheese!
