Ingredients

  • 4 oz linguine pasta
  • 2 (6 oz) boneless, skinless chicken breasts, sliced into thin strips
  • 2 tsp cajun seasoning
  • 2 Tbsp butter
  • 1/2 c chopped green bell pepper
  • 3/4 c sliced fresh mushrooms
  • 1/2 c chopped red bell pepper
  • 1/2 c sliced zucchini
  • 2 Tbsp minced green onion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried basil
  • 1/8 tsp garlic powder
  • 1 1/2 c heavy cream
  • 2 Tbsp grated parmesan cheese

Instructions

  • Cook pasta according to directions on package; drain.
  • Meanwhile, toss chicken strips with cajun seasoning in a bowl.
  • Melt butter in a large skillet over medium heat. Cook chicken until no longer pink and juices run clear, 5-7 minutes.
  • Add bell peppers, mushrooms, zucchini and green onion to skillet; cook 2-3 minutes.
  • Add salt, pepper, basil and garlic powder; cook, stirring until fragrant, about 1 minute.
  • Stir in cream. Increase heat to medium-high and bring to a simmer.
  • Cook until slightly thickened, about 8 minutes.
  • Add noodles and toss; cook until heated through. Sprinkle with parmesan cheese.
