Ingredients

  • 1 1/22 cups warm water
  • 1 1/2 tsp honey
  • 1 1/2 Tbsp olive oil
  • 1 1/2 tsp instant yeast
  • 44 1/2 cups bread flour
  • 2 tsp salt

Instructions

  • Combine Ingredients: In a large bowl, whisk together water, honey, olive oil, and yeast. Stir in flour and salt until a shaggy dough forms.

  • First Rise: Cover the bowl with plastic wrap and let rest for 15 minutes.

  • Stretch and Folds: Gently stretch and fold the dough over itself several times, turning the bowl as you go. Cover and let rest for 15 minutes. Repeat the stretch and fold process once more. Cover and let rise for 1 1/2 hours, or until doubled in size.

  • Shape Rolls: Lightly flour a work surface. Turn out the dough and gently shape into a rough rectangle. Cut the dough into desired sizes (3 long grinder sandwiches or 6 smaller rolls).

  • Second Rise: Line a baking sheet with parchment paper and lightly flour it. Place the shaped rolls on the baking sheet, cover loosely with plastic wrap, and let rise for 45 minutes.

  • Bake: Preheat oven to 425°F with a pan of water on the bottom rack to create steam. Bake for 6-8 minutes with steam. Remove the pan of water and continue baking for 8-10 minutes more, or until golden brown.

  • Cool: Let the rolls cool slightly on a wire rack before serving.

    Can you freeze these for later?

      You certainly could. I wouldn’t freeze them for too long. Up to a week at most but you could if needed. Thanks for asking.
