Ingredients
Ingredients for meat:
- 1 1/2 lbs beef
- 2 packages taco seasoning mix
- 3 small yellow potatoes diced
- 2 Tbsp olive oil
Ingredients for pico:
- 2 tomatoes, diced
- 1 large jalapeno pepper, seeded & finely chopped
- 1/3 c onion diced
- 2 tsp fresh lime juice
- 2 tsp fresh lemon juice
- 1/4 c cilantro, minced
- 1/2 tsp salt
Ingredients for guacamole:
- 2 large avocados, diced
- 1/3 c chopped onion
- 1 tsp fresh lime juice
- 1–2 Tbsp cilantro, minced
- 1/2 jalapeno pepper, seeded & finely chopped
- 1/2 tsp salt (to taste)
Other ingredients:
- 2 cups shredded cheese – we used cheddar & pepper jack cheese
- Sour cream and/or ranch dressing (optional)
Instructions
- In a large skillet, cook beef & drain off fat. Add taco seasoning per package directions and put in bowl (remove from pan), set aside.
- Dice potatoes & add oil to skillet. Add in diced potatoes and cook through, stirring occasionally so they do not burn. Add taco seasoning and mix well.
- Add back in your cooked meat mixture and stir all together. Remove from heat.
- Put your “bowl” together by adding your meat mixture, then top with cheese, pico and guacamole.
- If desired, top with a bit of sour cream and or ranch dressing. Enjoy!
Notes
- We added sour cream and ranch dressing but is not needed.
- Add in any other desired toppings – be creative! Make into a salad by adding in shredded lettuce!
