Ingredients
- 4 large baking potatoes (about 2 pounds)
- 8 slices of bacon
- 1/2 diced onion (we use sweet)
- 1/2 Tbsp minced garlic
- 1 (8 oz) carton of sour cream
- 1 cup shredded cheddar cheese (4 oz)
- 1 cup sliced green onions
- 1/2 cup milk
- 4 Tbsp butter, softened
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 350F.
- Prick potatoes with a fork and transfer to a rimmed baking sheet. Bake until tender, about 1 1/2 hours. Cool 10 minutes.
- Meanwhile, cook bacon in a large skillet over medium-high heat until crisp. About 10 minutes. Drain bacon on paper towels, then crumble.
- In another pan, add your butter at medium-high heat until melted. Add in your onion and cook until starting to become translucent. Add in your garlic and cook fo 2 minutes more. Remove from heat.
- Slice potatoes in half lengthwise and scoop flesh into a large bowl, keeping skins intact.
- In the bowl with the potato insides – pour in your butter, onion mixture and mix well.
- Add sour cream, 1/2 cup cheese, 1/2 cup green onions. Combine fully until creamy.
- Spoon mixture into skins, then top each with bacon and remaining cheese.
- Return potatoes to baking sheet. Bake until heated through and cheese is melted, about 15 minutes.
- Sprinkle with remaining green onion & enjoy!
Notes
- Get creative with your toppings! You can customize these to your liking – have fun with them!
- You can pre-make these & store in the refrigerator the day prior. Then cook for 30-45 minutes until heated through the day of.
