Ingredients

  • 1/4 cup warm water (110-115F)
  • 2 1/2 tsp active dry yeast
  • 3/4 cup warm milk
  • 1 large egg
  • 1/4 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1 tsp salt
  • 3 1/43 3/4 cups all-purpose flour
  • 1 large egg (for the egg wash)

Milk-Sugar Topping

  • 1/4 cup sugar
  • 1/4 cup milk powder

Instructions

  • Activate the Yeast: In a small bowl, dissolve the yeast in warm water. Let stand for 5 minutes, or until foamy.

  • Combine Wet Ingredients: In a large mixing bowl, combine milk, melted butter, egg, sugar, and salt. Stir well.

  • Incorporate Yeast and Flour: Stir in the foamy yeast mixture. Gradually add 3 cups of flour, mixing until incorporated. Continue adding the remaining flour, little by little, until the dough forms a ball (you may not need all the flour).

  • Knead the Dough: Turn the dough onto a floured surface and knead for 6-10 minutes, until smooth, elastic, and able to stretch thinly.

  • First Rise: Place the dough in a greased bowl, cover with plastic wrap, and let rise for 1-1.5 hours, or until doubled in size.

  • Shape the Buns: Gently deflate the risen dough and divide it into 50-55 portions. Shape each portion into a smooth 1.5-inch ball.

  • Arrange and Second Rise: Arrange the dough balls close together in a greased 9×13 inch baking pan. Cover loosely with plastic wrap and let rise for 1 hour.

  • Prepare Sugar Topping: Preheat oven to 350°F (175°C). In a small bowl, combine milk powder and sugar.

  • Egg Wash and First Sugar Application: Beat one egg and brush it over the surface of the risen buns. Sprinkle half of the milk-sugar mixture evenly over the buns.

  • Bake the Buns: Bake at 350°F (175°C) for 17-20 minutes, or until golden brown.

  • Final Sugar Application and Cool: Allow the buns to cool slightly, then sprinkle the remaining milk-sugar mixture over the top. Serve warm.
