Ingredients

Scale
  • 4 medium chicken thighs, trimmed & cut into 1-inch pieces
  • 1 tsp granulated garlic
  • 1 tsp crush oregano
  • 1 tsp smoked paprika
  • pinch of crushed red pepper
  • 3 Tbsp beer (stout is best)
  • 3 Tbsp oil
  • salt & pepper to taste
  • 4 ounces bacon
  • passion fruit (optional)
  • metal skewers

Instructions

  • Make sure that all the fat from the thighs have been removed before cutting the chicken.  Then cut it into 1-inch pieces.
  • Mix granulated garlic, crushed oregano, paprika and beer in a bowl, then add the oil and emulsify it into the liquids, if possible, season with salt & pepper, to taste.  Then incorporate the chicken and allow it to rest for at least 30 minutes, 15 minutes the least if running short in time, at room temperature until ready to broil or grill.
  • Heat your broiler for about 15 minutes, get a sheet pan ready with a griddle top.  Line your sheet pans with foil, for easy cleanup.
  • Wrap the chicken pieces with pieces of bacon and secure the bacon to the chicken when inserting into the skewers, make sure they are very tight together, no space in between the pieces.
  • When your broiler is hot, place the skewers on the sheet pan, and take them to the broiler.  2 minutes, flip and rotate and add 3-4 minutes total on each side but flip them at a 2-minute mark to prevent from burning.  Bring out of the oven, cover with foil and rest for 2 minutes before serving.
  • To serve you could hang the skewers, or you could place them on a platter and with the help of tongues slice the pieces of meat out on the plates.

Notes

  • If using passion fruit, cook it in the next 30 minutes, if not you could marinate overnight to increase the flavors.  increase the absorption of the marinade, by poking holds in your chicken.  You could use a cake tester or fork.
