Ingredients

  • 4 slices bacon, diced
  • 6 large eggs
  • 1 1/4 cups (4% milkfat) cottage cheese
  • 1 1/4 cups shredded Gruyère (or a blend of Gruyère and Cheddar or Monterey Jack)
  • 2 tablespoons cornstarch
  • Heaping 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon hot sauce, such as Tabasco

Instructions

  • Preheat your oven to 300°F (150°C), positioning one oven rack in the middle and another in the lowest position.

  • Bring a kettle of water to a boil. Carefully place a 9×13-inch metal or ceramic baking dish on the lower oven rack and fill it halfway with the boiling water. This creates a steam bath in the oven, which helps the egg bites cook gently and develop a custard-like texture.

  • Generously spray a nonstick muffin tin with nonstick cooking spray to prevent sticking.

  • Cook the Bacon: In a small nonstick skillet over medium-high heat, cook the bacon, stirring frequently, until it is crisp (about 5 to 6 minutes). Once crispy, transfer the bacon to a paper towel-lined plate using a slotted spoon to drain any excess grease.

  • Blend the Egg Mixture: In a blender, combine the eggs, cottage cheese, Gruyère cheese, cornstarch, salt, pepper, and hot sauce (if using). Blend until the mixture is completely smooth, about 30 seconds.

  • Assemble the Egg Bites: Pour the blended egg mixture evenly into the prepared muffin tin, filling each well approximately three-quarters full. Crumble or chop the cooked bacon and distribute it evenly over the egg mixture in each muffin cup. Use a spoon or your finger to gently press some of the bacon slightly into the batter so it doesn’t all remain on top.

  • Bake the Egg Bites: Carefully place the muffin tin on the middle oven rack and bake for 20 to 25 minutes, or until the egg bites are set. They are done when they start to pull slightly away from the edges of the muffin cups and the centers are no longer liquid. Some puffing and slight lopsidedness may occur during baking but they will settle as they cool.

  • Cool and Serve: Remove the muffin tin from the oven and let the egg bites rest in the pan for about 5 minutes. Gently loosen the egg bites from the edges of each muffin cup using a small spoon. Carefully lift the egg bites out of the pan and onto a plate. Serve warm.

  • Prep Ahead and Freeze: These egg bites are perfect for meal prepping! Once cooled, store them in an airtight container in the fridge for up to 3 days for a quick breakfast or snack. To freeze, let them cool completely, then place them in a freezer-safe airtight container for up to 2 months. Thaw in the fridge overnight and then reheat in the microwave until heated through. For best results when microwaving, use 50% power for 1-1.5 minutes.
