  • 4 oz spaghetti, udon noodles or 1 individual package instant ramen (noodles only)
  • 2 Tbsp creamy peanut butter
  • 1 Tbsp butter
  • 1 Tbsp grated Parmesan cheese, plus more for serving
  • 1 tsp soy sauce
  • chili flakes (optional – for heat)
  • peanuts (optional to top with)

Instructions

  • Bring a pot of water to a rolling boil. If using spaghetti or a similar pasta, be sure to salt the water for extra flavor.

  • Add the noodles to the boiling water and cook according to the package directions until al dente.

  • Before draining, carefully scoop out and reserve 1 cup of the pasta cooking water. Then, drain the noodles thoroughly and return them to the empty pot. Turn off the heat under the pot.

  • Add the butter, peanut butter, soy sauce, and grated Parmesan cheese to the hot noodles in the pot.

  • Stir the noodles vigorously for about a minute, allowing the butter and peanut butter to melt and coat the pasta. Gradually add the reserved cooking water, one to two tablespoons at a time, while continuing to stir. Keep adding the water until a glossy sauce forms that nicely clings to the noodles. You may not need to use all of the reserved water.

  • Taste the noodles and season with additional salt as needed. If you like a little heat, add chili flakes to taste at this point and stir them in.

  • Serve the noodles immediately, topped with extra grated Parmesan cheese and a sprinkle of additional chili flakes, if desired. Enjoy!
