Ingredients
- 4 teaspoons kosher salt, divided, plus more to taste
- 3 pounds baby gold potatoes
- 3 tablespoons olive oil. divided
- 3/4 teaspoon pepper, divided, plus more to taste
- 1/2 teaspoon garlic powder
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon finely chopped fresh dill, plus more for garnish
- 1 tablespoon finely chopped fresh parsley, plus more for garnish
- 1 bunch green onions, thinly sliced, divided

Boil the Potatoes: Place the potatoes in a large pot and cover them with water. Add 1 tablespoon of salt and bring to a boil over high heat. Reduce the heat to medium-high and cook for 12-15 minutes, or until the potatoes are tender when pierced with a fork. Drain the potatoes thoroughly.

Prepare Baking Sheet: Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or aluminum foil.
