Ingredients

Units Scale
  • 16 oz lasagna noodles, cooked and cut ready for frying
  • 1 pound shredded mozzarella cheese
  • vegetable oil for frying

Sauce

  • 1 lb Italian sausage, cooked
  • 24 oz jar of favorite marinara sauce (or homemade)
  • 1 Tbsp parsley
  • 1/2 Tbsp Italian seasoning
  • 1/2 Tbsp fresh basil finely sliced (+ more for topping if desired)

Cheese mixture

  • 1 cup ricotta cheese
  • 1 Tbsp Italian seasoning
  • Salt & pepper to taste

Instructions

  • Cook sausage until fully browned.  Add in your marinara sauce & seasonings.  Set aside
  • In a small bowl, add your ricotta cheese and seasonings, mix and set aside.
  • Cook your lasagna noodles until al dente.  You want them to bend but not fully cooked.
  • Preheat your oil in a shallow frying pan while you cut your noodles into triangle shapes.
  • Fry your noodles until golden brown – but don’t burn them.  When they come out – immediately season them with salt, pepper and Italian seasoning.
  • On a baking sheet you will now “assemble” your nachos.  Put a layer of chips on the bottom, then add a layer of shredded mozzarella cheese, then a layer of your meat/sauce mixture (making sure most chips get some of this on them) and then a layer of dollops of your ricotta cheese mixture.  
  • Proceed to do a second layer of these and top lastly with a generous amount of mozzarella cheese.
  • Bake in oven at 425F for 15-20 minutes or until all the cheese is melted and is starting to brown.  (Keep an eye on it!)
  • Top with thinly sliced basil if desired & enjoy!
