Ingredients

  • 4 hashbrown patties
  • 3/4 cup shredded cheese (we did cheddar)
  • 1/2 cup sour cream
  • 1 Tbsp green onions, finely minced
  • 1 Tbsp chives, finely minced
  • 1 tsp Ranch seasoning (dressing mix)
  • cooked & crumbled bacon bits (2-3 slices of bacon)
  • 3 eggs, scrambled
  • salt & pepper to taste

Instructions

  • Crisp Hashbrowns: Air fry your hashbrown patties at 400°F (200°C) for 20 minutes, or until golden brown and crispy.
  • Melt Cheese: Carefully top the hot hashbrowns with shredded cheese and return to the air fryer for an additional 2-3 minutes, just until the cheese is melted and bubbly.
  • Prepare Creamy Topping: While the hashbrowns are crisping, in a small bowl, combine the sour cream, fresh chives, and ranch seasoning. Mix well.
  • Assemble: Once the cheesy hashbrowns are ready, spread a generous layer of the seasoned sour cream mixture over the melted cheese.
  • Add Protein & Garnish: Top the sour cream layer with scrambled eggs, then finish with a sprinkle of chopped green onions and bacon bits.
