Rustic Charm Meets Delicious Flavor: Homemade Ciabatta Bread

Craving the bakery-fresh taste of ciabatta bread but want to skip the store? This recipe makes it easy to create this classic Italian bread at home!

Known for its airy crumb and crispy crust, ciabatta is perfect for dipping, sandwiches, or simply enjoying on its own. Our recipe uses just a handful of ingredients and requires minimal kneading, making it ideal for beginner bakers.

The secret lies in a wet dough and a folding technique that develops a beautiful open crumb.

Ingredients

Units Scale
  • 400 grams bread flour (1 3/4 cups)
  • 350 grams water (1 1/2 cups)
  • 35 grams olive oil (1/3 cup)
  • 1 Tbsp instant yeast
  • 2 tsp salt
  • flour for dusting

Instructions

  • In a large bowl, combine the bread flour, water, yeast, olive oil and salt.  Mix until well combined.
  • Cover the dough and let it rest for 30 minutes.
  • Perform a coil fold by folding the dough from all four corners towards the center. Cover and let rest for another 30 minutes.
  • Repeat the coil fold three more times, letting the dough rest for 30 minutes between each fold.
  • Once the final coil fold is done, transfer the dough to a floured surface and dust the top with flour.
  • Carefully roll out the dough into a large rectangle.
  • Cut the dough into 6 equal pieces.
  • Place the dough pieces on a parchment lined baking tray.
  • Place another tray of water at the bottom of the oven to create steam.
  • Bake the ciabatta bread at 450F for 20 minutes.
  • Remove from the oven & let cool before serving.
