Ingredients
Peaches
- 2 yellow peaches, pitted, sliced
Glaze
- 1/2 cup peach preserves
- 1 Tbsp extra virgin olive oil
- 1 tsp soy sauce
- 1 tsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp garlic, minced
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp red pepper flakes
Chicken
- 2 lbs boneless, skinless chicken thighs
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp chilli powder
- 2 Tbsp extra virgin olive oil
- 1 medium jalapeno pepper, thinly sliced
Instructions
Part 1: Peach Glaze

Whisk Glaze: In a medium bowl, whisk together the peach glaze ingredients until fully incorporated. Set aside.
Part 2: Cook the Chicken

Prep Chicken: Pat the chicken thighs dry with a paper towel. In a small bowl, combine the salt, pepper, and chili powder. Apply the seasoning mixture evenly to all sides of the chicken.

Sear Chicken: Heat the oil in a large nonstick skillet over medium heat until hot. Add the chicken thighs, working in batches if necessary to avoid overcrowding. Cook for 5 minutes, or until golden brown.

Finish Cooking: Flip the chicken, reduce the heat to medium-low, and cook for another 5 minutes, or until the chicken reaches an internal temperature of 165°F.

Keep Warm: Remove the cooked chicken from the skillet and transfer it to a plate. Tent it with foil to keep it warm.
Part 3: Combine & Finish

Sauté Jalapeños & Peaches: In the same skillet, increase the heat back to medium. Add the jalapeño peppers and cook for 3 minutes. Stir in the peaches and cook for an additional 3 minutes, or until they have softened slightly.

Add Glaze: Pour the prepared peach glaze into the skillet with the peaches and jalapeños. Stir to ensure all the ingredients are evenly coated.
