Ingredients

Dough

  • 2 1/4 tsp instant yeast
  • 1 cup milk, lukewarm
  • 1/2 cup sugar
  • 1/3 cup butter, softened
  • 1 tsp salt
  • 2 eggs
  • 4 cups flour

Peach Jam (or buy store bought!)

  • 3 peaches, peeled & pitted
  • 3/4 cup sugar
  • 1/2 tsp lemon juice
  • 1 Tbsp EZ gel or cornstarch

Cobbler Crumble Topping

  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/8 cup flour
  • 6 Tbsp butter, melted

Cinnamon Filling

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 4 Tbsp cornstarch
  • 1 3/4 Tbsp cinnamon
  • 1/8 tsp salt

Peach Cream Cheese Frosting

  • 3 oz cream cheese, at room temperature
  • 2 Tbsp butter, softened
  • 1/2 Tbsp corn syrup, light karo syrup
  • 1 cup powdered sugar
  • 3/4 tsp vanilla
  • 1/21 Tbsp milk
  • 1 1/2 Tbsp peach jam (prepared above or store bought)

Instructions

Part 1: Dough

  1. Activate Yeast: In a large bowl, dissolve the yeast and a teaspoon of sugar in the warm milk. Let sit for about 5 minutes, until the mixture becomes foamy.

  2. Mix Dough: To the yeast mixture, add the remaining sugar, softened butter or margarine, salt, eggs, and flour. Mix with a stand mixer until a soft, uniform dough forms and pulls away cleanly from the sides of the bowl.

  3. First Rise: Place the dough into a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour, or until it has doubled in size.


 

Part 2: Peach Jam

  1. Cook Jam: In a medium saucepan over medium heat, combine the peaches, sugar, and lemon juice. Stir in the EZ gel.

  2. Thicken: Cook for 5-10 minutes, stirring occasionally, until the mixture thickens to a jam-like consistency.

  3. Cool: Remove from heat and set aside to cool completely before using.


 

Part 3: Cobbler Crumb Topping

  1. Prep Oven & Pan: Preheat your oven to 350°F. Line a baking sheet with parchment paper.

  2. Mix Crumb Topping: In a medium bowl, combine the brown sugar, granulated sugar, cinnamon, salt, flour, and melted butter. Use your hands to mix until large, chunky crumbs form.

  3. Bake Crumb: Spread the mixture on the prepared baking sheet and bake for 8 minutes. Remove from the oven and let cool completely. Once cool, break the large chunks into smaller pieces.


 

Part 4: Cinnamon Filling

  1. Mix Filling: In a separate bowl, mix together the softened butter, brown sugar, granulated sugar, cinnamon, salt, and EZ Gel until well combined. Set aside.


 

Part 5: Assembly & Baking

  1. Prep Dough: Once the dough has risen, very lightly flour your counter and roll the dough into a large, even rectangle.

  2. Add Fillings: Spread the cinnamon filling evenly over the dough. Then, spread 1/2 cup of the cooled peach jam on top of the filling. Sprinkle 1/2 of the prepared cobbler crumb topping over the jam.

  3. Roll & Cut: Tightly roll the dough into a log, starting from a short side. Use a long piece of dental floss or a serrated knife to cut the log into individual rolls.

  4. Second Rise: Arrange the rolls in a greased 9×13-inch or 8×8-inch baking dish (depending on the number of rolls), cover with a towel, and let them rise for 20-30 minutes, or until doubled in size.

  5. Bake: Bake at 350°F for 20-22 minutes, or until the tops are golden brown. Do not overbake! While the rolls bake, prepare the frosting.


 

Part 6: Frosting

  1. Make Frosting: Using a hand mixer and a separate bowl, beat the softened cream cheese until smooth. Add the softened butter and beat again. On a low speed, add the corn syrup, powdered sugar, and vanilla, mixing until combined. Slowly add the milk, a little at a time, until the frosting reaches your desired consistency.

  2. Finish Rolls: Remove the rolls from the oven. Spread the frosting generously all over the hot rolls with a spoon. Sprinkle the remaining cobbler crumb topping on top.

  3. Serve: Serve warm and enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
