Ingredients
- 1 large egg
- 1 lb ground beef
- 1/4 yellow onion, finely chopped
- 1 1/2 oz finely shredded Parmesan cheese (about 1/2 cup)
- 1 1/4 oz finely shredded provolone cheese (about 1/3 cup)
- 3 cloves garlic, finely chopped
- 2 Tbsp chopped fresh flat-leaf parsley
- 2 Tbsp Italian seasoned bread crumbs
- 1 Tbsp chopped fresh basil
- 1 Tbsp chopped fresh oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1 1/2 c store bought or homemade marinara sauce, divided
- 9 egg roll wrappers
- 2 cup shredded low-moisture mozzarella
- neutral oil, for frying (about 6 cups)

Part 1: Make & Bake the Meatballs

Preheat your oven to 400°F. Line a baking sheet with parchment paper.

In a medium bowl, lightly beat the egg. Add the ground beef, onion, parmesan, provolone, garlic, parsley, bread crumbs, basil, oregano, salt, and pepper. Gently mix everything together to combine.

Portion the mixture into 36 small balls, about ½ ounce each (or about 2 teaspoons per ball). Arrange them on the prepared baking sheet.

Bake the meatballs for about 10 minutes, or until they are browned. Let them cool for 5 minutes.

Transfer the meatballs to a large bowl and toss them with ½ cup of marinara sauce to coat.
Part 2: Assemble the Egg Rolls

Lay an egg roll wrapper on a flat surface with one corner pointing toward you.

Sprinkle ¼ cup of mozzarella cheese into the center of the wrapper, leaving a 1-inch border. Arrange 4 of the sauce-covered meatballs on top of the cheese.

Brush the edges of the wrapper with water. Fold the bottom corner up and over the filling, then fold in the two side corners.

Tightly roll the wrapper away from you, sealing it as you go. Repeat with the remaining meatballs and wrappers.
Part 3: Fry & Serve

Pour oil into a large Dutch oven or a heavy pot to a depth of about 2½ inches. Heat the oil over medium-high heat until a thermometer registers 350°F.

Carefully place the egg rolls into the hot oil. Fry them, turning occasionally, for 7-8 minutes or until they are golden brown and crispy.

Transfer the fried egg rolls to a wire rack set over a baking sheet to drain off any excess oil.
