Ingredients
- 4 slices thick-cut bacon
- 1 cup cornmeal
- 3/4 cup all-purpose flour
- 2 Tbsp sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 cup chopped Gala apple
- 2 eggs, slightly beaten
- 1/4 cup butter, melted
- 1 jalapeno pepper, chopped

Part 1: Cook the Bacon & Prep

Preheat your oven to 420°F.

In a 9 or 10-inch cast-iron skillet, cook the bacon over medium-high heat for about 6 minutes, until the pieces are almost crispy.

Transfer the bacon to a cutting board and finely chop it. Leave 1 tablespoon of the bacon drippings in the skillet.

Place the skillet in the preheated oven for 5 minutes to get hot.
Part 2: Make the Batter

In a large bowl, combine the dry ingredients: flour, cornmeal, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, apple, and eggs. Stir in the chopped jalapeño and bacon pieces.
