Ingredients

  • 4 slices thick-cut bacon
  • 1 cup cornmeal
  • 3/4 cup all-purpose flour
  • 2 Tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 cup chopped Gala apple
  • 2 eggs, slightly beaten
  • 1/4 cup butter, melted
  • 1 jalapeno pepper, chopped

Instructions

  • Part 1: Cook the Bacon & Prep

    1. Preheat your oven to 420°F.

    2. In a 9 or 10-inch cast-iron skillet, cook the bacon over medium-high heat for about 6 minutes, until the pieces are almost crispy.

    3. Transfer the bacon to a cutting board and finely chop it. Leave 1 tablespoon of the bacon drippings in the skillet.

    4. Place the skillet in the preheated oven for 5 minutes to get hot.


    Part 2: Make the Batter

    1. In a large bowl, combine the dry ingredients: flour, cornmeal, sugar, baking powder, and salt.

    2. In a separate bowl, whisk together the milk, apple, and eggs. Stir in the chopped jalapeño and bacon pieces.

    3. Pour the wet ingredients into the bowl with the dry ingredients. Gently stir the mixture with a spatula until everything is just moistened.


    Part 3: Bake the Skillet Bread

    1. Carefully remove the hot skillet from the oven. Quickly and carefully pour the batter into the hot skillet.

    2. Bake for 17 to 20 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

    3. If you like, top with additional chopped apples and jalapeños. Cut the bread into wedges and serve warm.

Notes

  • For even more flavor, stir in 3/4 cup shredded sharp white cheddar cheese and/or 2 Tbsp sliced green onion with the jalapeno and cooked bacon pieces!
