Egg Nog Bars

Egg nog bars are a delicious and festive treat that is perfect for the holiday season. They are made with simple ingredients that is infused with the flavor of egg nog. The bars are then topped with a creamy eggnog frosting. These bars are easy to make and they are sure to be a hit with everyone who tries them.

Ingredients:

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/3 cup eggnog
  • 1 tsp vanilla
  • 2 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Frosting:

  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1/4 cup eggnog
  • 1/2 tsp vanilla
  • pinch of nutmeg (garnish)

Instructions

  • Prepare a 8×8 baking dish with parchment paper or spray with non-stick cooking spray.  (I like to use parchment & leave extra on the sides overhand to easily pull out.) Preheat oven to 350F.
  • In a bowl combine your wet ingredients: butter, brown sugar and sugar until light and fluffy – make sure it is about 2-3 minutes long mixing.  Then add your egg, vanilla and egg nog and mix until thoroughly combined.
  • In a separate bowl, combine your dry ingredients: flour, baking powder, nutmeg and salt.  Whisk until mixed well.  Add dry ingredients to your wet ingredients just until you do not see flour streaks anymore.
  • Press your cookie dough into the prepared 8×8 baking dish.  My tip: spray a ziploc bag with non-stick spray and press it down evenly.
  • Bake in oven for 25-27 minutes or until a toothpick inserted comes out clean from the center.
  • While these cool, make your frosting by beating all frosting ingredients together until smooth and creamy.
  • Once your bars are completely cooled, frost evenly and sprinkle a bit of nutmeg on top.  I use a small sifter so that the larger bits of nutmeg are not added.  Then slice & serve!
