Ingredients

  • 120 oz can crushed pineapple drained (reserve pineapple juice)
  • 13.4 oz package of instant pistachio pudding
  • 912 oz of cool whip or whipped whipping cream
  • 1 cup miniature marshmallows
  • 1/2 cup pistachios chopped

Instructions

1 – In a medium mixing bowl dissolve instant pistachio pudding in reserved pineapple juice.

2 – Add 9-12 oz cool whip or whipping cream and combine.

3 – Add 1 cup of miniature marshmallows and crushed pineapple to the whipping cream/pistachio pudding mixture.

4 – Add the mixture to a prepared dish or leave in the mixing bowl and set in the refrigerator for at least 3 hours to set (this can be prepared the night before).

5 – Once the mixture has set up garnish with chopped pistachios then serve and enjoy!
