Nun’s Puffs
These delicate pastries, aptly named “Nun’s Puffs” (or “Pets de Soeur” in French), are a delightful treat. Made with a simple pâte à choux dough, they puff up dramatically in the oven, creating airy pockets of crispy goodness. While they may seem intimidating, they’re surprisingly easy to make with a little practice.
The key to successful Nun’s Puffs lies in the careful preparation of the dough. It’s crucial to cook the flour-milk mixture over low heat until it forms a smooth ball, ensuring all the moisture is absorbed. Then, incorporating the eggs one at a time is essential to create a smooth and airy batter.
These delicate puffs are perfect for a simple afternoon snack or a sophisticated dessert. Enjoy them plain, dusted with powdered sugar, or filled with whipped cream, jam, or custard.
Tips for Success:
- Don’t overmix: Overmixing the dough can result in dense puffs.
- Cool the dough: Allow the dough to cool slightly before adding the eggs to prevent scrambling.
- Don’t open the oven door: Opening the oven door during baking can cause the puffs to deflate.
I hope you enjoy the process of making these enchanting treats as much as I do. Happy baking!

Ingredients
- 1/2 cup butter
- 1 cup milk
- 3/4 cup flour
- 4 eggs
- Whipping cream
- 1/2 cup melted butter
- 1/2 cup of sugar
- 1 tsp ground cinnamon
Instructions
1 – Heat your oven to 375 degrees F then generously grease a mini muffin pan both inside and around the edges or each cup.
2 – In a medium saucepan, melt butter, add milk then bring to a boil. Add flour all at once, stirring vigorously, cooking and stirring until the mixture forms a smooth ball that does not separate. Remove from the heat and let it cool for 5 minutes.
3 – Add the eggs one at a time, beating each into the dough for 1 minute until the dough is smooth. Divide the dough evenly among the prepared mini muffin pan cups filling each to about two thirds full.
4 – Bake for about 30 minutes or until golden brown and puffy. Meanwhile combine the sugar and cinnamon and make a batch of whipping cream for the centers of the puffs if desired.
5 – Remove the nun’s puffs from the oven and allow them to cool fully before filling them with cream or dip the tops of the warm puffs in melted butter then into the cinnamon sugar mixture. You can also drizzle them with honey or serve them with fresh fruit.
