Raisin Bran Muffins

There’s nothing quite like the comforting aroma of freshly baked muffins wafting through the kitchen. These Raisin Bran Muffins are a classic for a reason! They’re incredibly easy to make, bursting with flavor, and perfect for a quick and satisfying breakfast or a delicious afternoon snack. With their moist texture and irresistible raisin sweetness, these muffins are sure to become a family favorite.

Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup buttermilk
  • 2/3 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup applesauce or apple butter
  • 3/4 cup raisins (measure with your heart)

Instructions

1 – Preheat the oven to 375 degrees F.  Grease 12 muffin cups or line with paper muffin liners.

2 – Mix wheat bran and buttermilk together in a large bowl.  Let stand for 10 minutes

3 – In a separate bowl, beat together brown sugar, oil, egg and vanilla until light and fluffy.  Stir in the buttermilk/bran mixture.

4 – Sift together flour, baking powder, baking soda, salt and cinnamon together in a bowl.  Stir dry ingredients into the buttermilk mixture until just combined.  Stir in applesauce or apple butter.

5 – Fold in raisins then spoon batter into prepared muffin tins filling each at least ⅔ full.

6 – Bake in a preheated oven until a toothpick inserted in the center comes out clean and the tops spring back when lightly pressed, about 20 – 25 minutes.  Cool for 5 minutes in the muffin tins then transfer to a wire rack to continue cooling.

Notes

  • Muffins stay fresh covered at room temperature for a few days, then transfer to the refrigerator for up to a week.

  • For longer storage, freeze the muffins for up to 3 months.  Thaw overnight in the refrigerator then heat up in the microwave if desired.

  • I am a fan of Bob’s Red Mill brand of Wheat Bran.  It can be found in the cereal aisle near the oats.  Any brand will work though.

  • You can use ¾ cup dried cranberries, blueberries or cherries if you would like or add chopped walnuts or pecans.
