Notes
-
Muffins stay fresh covered at room temperature for a few days, then transfer to the refrigerator for up to a week.
-
For longer storage, freeze the muffins for up to 3 months. Thaw overnight in the refrigerator then heat up in the microwave if desired.
-
I am a fan of Bob’s Red Mill brand of Wheat Bran. It can be found in the cereal aisle near the oats. Any brand will work though.
-
You can use ¾ cup dried cranberries, blueberries or cherries if you would like or add chopped walnuts or pecans.
