Ham & Cheese Waffles

Who says waffles are just for sweet treats? This Ham & Cheese Waffles recipe is a savory twist on a breakfast favorite. Ingredients

  • 2 cups all purpose flour
  • 2 Tbs Sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 1/2 cup butter, melted
  • 2 large eggs, separated
  • 1/2 tsp dried dill weed
  • 8 oz cooked ham, finely chopped
  • 1 1/2 cups shredded sharp white cheddar cheese (or cheese of choice)
  • Vegetable oil for your waffle iron
  • Sour Cream and Mustard Topping:
    • 1 cup sour cream
    • 2 Tbs mustard
    • 1 tsp dijon mustard
    • 2 Tbs mayonnaise

Instructions

1 – In a large bowl whisk flour, sugar, baking powder, baking soda and salt together.

2 – Whisk egg yolks, melted butter, and buttermilk in a medium bowl then add cooked ham, cheddar cheese and dill weed to the buttermilk mixture.  Gradually add buttermilk mixture into your dry ingredients mixing until just combined.

3 – Using an electric mixer, beat egg whites in a medium bowl until medium soft peaks form then fold egg whites into the batter.

4 – Add batter to a preheated, well greased waffle iron according to manufactures directions (either a belgian or regular waffle maker).  Close the lid quickly and don’t open until done on one side if using a stove top waffle iron (about 2min) then allow to cook on the other side until crisp and golden brown.  When done, use a fork to lift waffles off the grid.  Keep warm in a 300 degree F oven while baking the remaining waffles.

5 – Meanwhile, in a small bowl stir together sour cream, mustard, dijon mustard and mayo.  Serve waffles topped with the sour cream mixture, honey and diced chives.

Notes

  • I like to use a mini waffle iron for meal prep to make smaller ones for breakfasts or lunches. 
  • Store in the fridge for up to a week or you can freeze these waffles for up to a month.  To reheat, take out of the freezer the night before then either place the waffle in the microwave on high for 1 minute or in an air fryer at 350 degrees F and cook for 3-5 minutes flipping halfway through, until they are crispy and heated through; adjust time based on your waffle thickness and desired crispiness.
