Ingredients

Units Scale
  • 6–8 chicken breasts, cut into chunk size bites
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1 Tbsp hot sauce (I measure with my heart on this!)
  • Salt & pepper to taste (seasoning after frying)

Instructions

  • Heat the Oil: Heat oil in a deep fryer or a large, deep pan on the stovetop to 325°F (163°C). The oil should be several inches deep.

  • Prepare the Dry Mixture: In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder.

  • Prepare the Wet Mixture: In a separate bowl, whisk together the buttermilk, egg, and hot sauce.

  • Coat the Chicken:

    • Dredge each chicken piece thoroughly in the dry flour mixture.
    • Dip the floured chicken into the wet buttermilk mixture.
    • Return the chicken to the dry flour mixture, pressing firmly to ensure a good coating.
  • Fry the Chicken:

    • Carefully place the coated chicken pieces into the hot oil.
    • Fry for 3-5 minutes per side, or until golden brown and cooked through.
    • Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
  • Repeat: Continue coating and frying the remaining chicken pieces.

  • Season: Salt and pepper your chicken bites & enjoy!

Notes

You can do your whole chicken breast or cut into bite sizes like we do.  We also love to make chicken strips with this same recipe.  Be sure that your chickens internal temperature is at least 165F for safety!

What kind of oil do you use for the frying?
    Can’t wait to make them!

I would guess that most any oil would work. When I fry – I usually use vegetable oil as it has a high smoke point. Avocado oil is a great option as well.

Can you air fry the chicken?

Sure can! Make sure the internal temperature is at least 165F. Be sure to spray them with oil and shake/flip them half way through cooking.
