Ingredients
- 1 pound kielbasa, any type/flavor you like
- 6–8 cups chopped vegetables
- broccoli
- cauliflower
- sweet potato
- zucchini
- sweet onion
- mushrooms
- bell pepper, any color
- baby potatoes
- carrots
- brussels sprouts
- yellow squash
- cherry tomatos
- 5–6 Tbsp olive oil (we also like avocado oil)
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- fresh shredded parmesan cheese (optional)
Instructions

- Preheat & Prep Pan: Preheat your oven to 400°F (200°C). Line a large sheet pan with aluminum foil for easier cleanup.
- Chop & Combine: Chop all your chosen vegetables into roughly equal-sized pieces to ensure even cooking. Slice the kielbasa into rounds or half-moons. Add the chopped vegetables and sliced sausage to the prepared sheet pan.
- Season & Toss: Drizzle the olive oil generously over the vegetables and sausage. Toss everything together directly on the sheet pan until all the ingredients are evenly coated.
- Spice It Up: Sprinkle your desired spices and herbs over the mixture, then toss again to distribute them well. Spread the ingredients out into a single, even layer on the pan – avoid overcrowding for best roasting results.
- Initial Bake: Bake for 10 minutes in the preheated oven.
- Second Bake: Remove the sheet pan from the oven, toss everything gently to promote even browning, and return to the oven for an additional 10 minutes, or until the vegetables are tender-crisp and the kielbasa is nicely browned.
- Finish & Serve: Carefully remove the sheet pan from the oven. If desired, sprinkle with Parmesan cheese or drizzle with balsamic glaze immediately. Serve as is for a low-carb meal, or over rice for a heartier option.
Notes
- Pick & choose whatever vegetables you like.
- For even cooking, be mindful of how you chop your veggies! Denser vegetables like sweet potatoes should be cut into smaller pieces, while quicker-cooking ones like zucchini can be cut a bit thicker. This ensures everything finishes cooking at the same time.
