Ingredients

For the chicken

  • 1 lb chicken tenders or boneless thighs
  • 3/4 cup buttermilk
  • 1 tsp hot sauce
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper (adjust to taste)
  • oil for frying (vegetable or peanut)

Nashville Hot Oil

  • 1/4 cup frying oil (reserved after cooking chicken)
  • 1 1/2 Tbsp cayenne pepper
  • 1 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • pinch of salt

For the Slaw

  • 1 1/2 cups shredded cabbage
  • 1 small carrot, grated
  • 2 Tbsp mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1 tsp honey
  • salt + pepper to taste

For the Waffles

  • 1 cup all-purpose flour
  • 1 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup buttermilk
  • 2 Tbsp melted butter or oil
  • 1/2 tsp vanilla extract
  • optional: 1/4 cup shredded cheddar or hot honey swirl in batter

Honey Butter Drizzle (Optional but amazing):

  • 2 Tbsp butter, melted
  • 1 Tbsp honey
  • pinch of salt

Instructions

  1. Marinate the Chicken
    • Mix buttermilk and hot sauce.  Add chicken and marinate for at least 30 minutes (or overnight in the fridge for best flavor).
  2. Make the Slaw
    • Mix cabbage, carrot, mayo, vinegar and honey.  Season with salt and pepper.  Chill while preparing the rest of the meal.
  3. Fry the Chicken
    • Heat oil to 350 degrees F (175 degrees C).
    • Mix flour, cornstarch and seasonings in a shallow bowl.
    • Dredge marinated chicken in flour mix and fry until crispy and golden, about 4-5 minutes.  Check temperature for 165 degrees F (74 degrees C).
    • Drain on a rack or paper towel.
  4. Make the Nashville Hot Oil
    • In a small bowl, mix cayenne, brown sugar, garlic powder, paprika and salt.
    • Carefully whisk in 1/4 cupt of the hot frying oil.  Brush or spoon over each of the fried chicken pieces.
  5. Make the Waffles
    • Preheat your waffle iron (ideally a round one for taco-style folds).
    • Whisk all waffle ingredients together until smooth.
    • Cook waffles until golden and just flexible enough to fold (not too crisp if you want to fold them taco-style.  Keep warm.
  6. Assemble
    • Start with a waffle and fold each like a taco.  Add slaw, a piece or two of hot chicken and a drizzle of honey butter
    • Optional: Top with sliced pickles, extra slaw or shredded cheese.
