Ingredients
- 1 package cheese tortellini 20 oz (fresh or frozen)
- 2 tbs olive oil
- 1/2 cup sweet onion, diced
- 6 cloves garlic, minced
- 2 Tbs all purpose flour
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes
- 1/2 cup sun dried tomatoes, chopped
- 2 cups vegetable broth
- 1 cup heavy cream
- 3/4 cup parmesan cheese, freshly grated
- salt and pepper to taste
- 2 cups fresh spinach
- parmesan and basil to garnish
Instructions
- in a large skillet heat olive oil over medium heat then add diced sweet onion until softened and slightly browned, 4-5minutes. Add minced garlic and saute for 30 seconds until fragrant.
- Stir in flour, italian seasoning and red pepper flakes and cook for 1 minute.
- Add vegetable broth and sun dried tomatoes stiring until well combined and smooth over medium heat. It will thicken slightly then bring to a simmer.
- Add tortellini directly into the sauce and cook for approximately 7 minutes until al dente.
- Lower the heat to medium low then add heavy cream, parmesan cheese and season with salt and pepper.
- Stir in spinach and cook another minute until the spinach starts to wilt then garnish with extra parmesan cheese and basil if desired.
