Ingredients

Scale
  • 4 eggs, separated
  • 1/4 tsp cream of tartar
  • 1 Tbsp oil
  • 1 Tbsp milk
  • 1/41/3 cup shredded cheese
  • salt & pepper to taste
  • chives (or green onions)
  • vegetables of choice
  • bacon bits (or meat of choice)

Instructions

  • Cut up bacon (or meat of choice) into 1/2 inch pieces & cook in saucepan until nice & crisp.  Put on paper towel to drain/dry.
  • Chop whichever vegetables you with to have in your omelette.
  • Preheat oven to 375 F.  Put vegetables into the hot skillet (except any soft vegetables like tomato, avocado, etc) to cook them down until soft.
  • Use oven safe skillet (or round cake pan) and grease it to prepare for baking.
  • Separate eggs into two smaller bowls.  Add milk & seasoning to yolks and mix.  In bowl with egg whites, add cream of tartar & beat with hand mixer until you have soft peaks.  Pour yolk mixture in & softly fold until combined.
  • Pour mixture into greased pan/skillet and cook on stovetop for 2 minutes.  Transfer to oven & cook 8 minutes longer.
  • Take out of oven & carefully get out of pan.  Top with cheese, vegetables, bacon (whatever you choose to be inside) and fold over to close.
