Ingredients for Soup:

  • 1.5 c shredded chicken
  • 1.5 Tbsp olive oil
  • 2 quarts chicken stock
  • 1 small onion – chopped
  • 1 garlic clove – chopped
  • 1 celery stalk – sliced thinly
  • 1 sprig of fresh thyme – leaves only
  • 8 ounces of mushrooms
  • 2 heaping Tbsp of flour

Ingredients for Crostini:

  • Crostini bread
  • 1 c shredded chicken
  • 1/2 c shredded parmesan
  • butter

Instructions

Directions for Soup:

  • In a large deep pan, saute celery and onions in olive oil until onions are transparent and celery is cooked.
  • Add garlic and thyme until garlic is aromatic.
  • Add shredded chicken and saute for 2 minutes.
  • Add mushrooms and saute until mushrooms are cooked through and soft.
  • Add flour to the pan and mix for 2 minutes.
  • Add chicken stock to the pan and mix while cooking until thickened.
  • If the soup is not at desired thickness – add a tsp of corn starch mixed in water to the soup to thicken.
  • Blend in blender (or use immersion blender) until smooth or desired consistency.

Directions for Crostini:

  • Cut bread into thin slices and butter the tops.
  • Add chicken to the top of each slice of bread.
  • Cover chicken with parmesan cheese.
  • Broil the crostini until cheese is melted & browning.
  • Add the cooked crostini onto the tops of each bowl of soup.
  • Garnish with a scoop of sour cream (optional) & parsley if desired & enjoy!
