Brussels, Caramelized Onion & Pistachio Pizza

We are absolutely obsessed with her creation: Brussels Sprouts, Caramelized Onion & Pistachio Pizza (with Balsamic Glaze).

Crust Ingredients

  • 1 cup warm water
  • 3 teaspoons active dry yeast
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • flour and coarse cornmeal for dusting

Topping Ingredients:

  • 3 tablespoons unsalted butter
  • 2 large sweet onions, thinly sliced
  • 4 sliced cooked & chopped bacon (1/2 c)
  • kosher salt and pepper
  • 1 pound brussels sprouts, stems removed and thinly sliced
  • 1 tablespoon olive oil
  • 1 cup freshly grated sharp white cheddar cheese
  • 1/2 cup freshly grated parmesan cheese, plus more for topping
  • 1/4 cup chopped roasted pistachios
  • drizzle of both: balsamic glaze & honey
  • fresh herbs like parsley or basil for topping, if desired

Instructions

I. Prepare the Pizza Dough

  1. Activate Yeast: In a large bowl, combine water, yeast, honey, and olive oil. Stir, then let sit for about 10 minutes until foamy.

  2. Mix Dough: Add the flour and salt. Stir until a sticky dough forms.

  3. Knead: Turn the dough onto a floured surface. Knead in the remaining 1/2 cup flour for a few minutes until smooth.

  4. Rise: Rub the bowl with olive oil, place the dough inside, and turn to coat. Cover and let rise in a warm spot for 1 to 1.5 hours.

II. Prepare the Toppings

  1. Caramelize Onions: Heat 2 Tbsp butter in a skillet over medium heat. Add sliced onions, salt, and pepper. Cook for 10 minutes until softened. Reduce heat to low and cook, stirring, for another 20 to 25 minutes until golden brown. Remove onions to a bowl.

  2. Cook Bacon: Line a baking sheet with foil and cook 4 slices of bacon (reserve for topping if desired, though the original recipe description didn’t include it in the final steps, it was mentioned here).

  3. Cook Brussels Sprouts: Add the remaining 1 Tbsp butter to the skillet over medium heat. Add the Brussels sprouts and garlic with salt and pepper. Cook for 6 to 8 minutes until softened and bright green.

III. Assemble and Bake

    1. Preheat & Prep Pan: Preheat the oven to 450F. Lightly sprinkle a 10×15 inch baking sheet with flour or cornmeal.

    2. Shape Dough: Punch down the risen dough and roll or stretch it to fit the 10×15 inch baking sheet.

    3. Oil & Cheese Base: Brush the dough with 1 Tbsp of olive oil, covering the edges. Sprinkle with some of the cheddar cheese.

    4. Layer Toppings: Layer the caramelized onions, then the Brussels sprouts. Top with the remaining cheddar cheese and all the Parmesan cheese. Sprinkle with the pistachios.

    5. Bake: Bake for 15 to 20 minutes, until the crust is deeply golden and the cheese is melted and bubbly.

    6. Finish: Remove from oven and let cool slightly before slicing. Drizzle with balsamic glaze and honey. Garnish with fresh herbs and grated Parmesan, if desired.
