  • 1 cup cold butter, cut into pieces
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups cake flour (this is easy to make yourself if you don’t have any)
  • 1/2 cup dark or Dutch-process unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 to 2 cups semisweet or bittersweet chocolate chips or chunks
  • Note on Cake Flour: If you don’t have cake flour, you can make your own by removing 2 tablespoons of all-purpose flour from the 2 1/2 cups and replacing it with 2 tablespoons of cornstarch.

Instructions

  • Preheat and Prep: Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper and set aside.
  • Cream the Butter and Sugar: In a large bowl, cream together the cold butter, brown sugar, and granulated sugar until light and fluffy.
  • Add Wet Ingredients: Beat in the eggs one at a time, then stir in the vanilla extract.
  • Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cake flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Mix in Chocolate Chips: Stir in the chocolate chips until evenly distributed.
  • Scoop and Bake: Scoop large balls of dough onto the prepared baking sheets, spacing them a few inches apart. Bake for 9-10 minutes, or until golden brown.
