Ingredients
- 2 lbs of diced yukon gold or red potatoes approximately 1/2” in size
- 4 cups of half & half
- 12 oz bag of frozen peas
- 1/2 of a medium-sized onion finely diced
- 2–3 garlic cloves, diced
- 1 1/2 cups parmasan cheese
- 4 Tbsp of butter
- 5 Tbsp flour
- 1 teaspoon of Herbs De Provence
- Salt and pepper to taste
Instructions
- Begin by dicing either yukon gold or red potatoes into approximately ½-inch cubes. Once prepared, place them in a pot of salted boiling water. Allow them to boil for roughly 12-15 minutes or until they approach a fork-tender consistency.
- In a clean saucepan, melt the unsalted butter over a medium flame. Subsequently, incorporate the finely diced onions. Sauté the onions until they attain a translucent appearance. Add in your garlic.
- Add in your flour and herbs de provence to make a roux. Then pour the heavy cream into the saucepan. Add 1/2 cup of parmasan cheese and stir until incorporated. Add in your salt & pepper to taste. Mix in completely with roux & then add your peas. Allow this mixture to come to a slight boil. Monitor the cream closely; once it begins to thicken, promptly remove the saucepan from the heat and add in your cooked potatoes.
- Grate (or add) the rest of the shredded parmesan cheese on top.
- Bake in a 375 degree oven until the cheese is melted – approximately 8-10 minutes. Serve immediately.
Notes
If you cannot find herbs de provence locally or do not have it on hand, you can substitute with Italian seasoning. The one key ingredient in herbs de provence you would be missing is lavender.
