Ingredients
- Spiral Cut Ham (I used 8 lb)
- 1/4 c apple juice (or orange juice)
- 3/4 c light brown sugar
- 3/4 c dark brown sugar
- 3 Tbsp honey
- 1/8 c maple syrup
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp paprika
- pinch of allspice
- pinch of cayenne flakes
- 1/4 c turbinado sugar in the raw
Instructions
- Prepare smoker for indirect cooking at 275 degrees.
- Unwrap the ham & place on prepared pan & place in the smoker meat side down so they sit upright.
- Smoke for 2 hours.
- Combine all ingredients except turbinado sugar into a bowl & mix thoroughly to make the glaze.
- Cover ham with glaze after 2 hour smoke mark – making sure it gets in between as many slices as possible.
- Smoke for 1 more hour with glaze on ham.
- After 1 hour, generously sprinkle the turbinado sugar over the ham.
- Increase smoker temperature to 325 and cook ham for another 30 minutes.
- Remove ham from smoker and place an aluminum foil tent over the ham and allow to sit/cool for 45 minutes.
- Cut ham (around spiral bone) and serve.
- Can be in the refrigerator fo 5-7 days or can be froze.
