Ingredients

Scale
  • Spiral Cut Ham (I used 8 lb)
  • 1/4 c apple juice (or orange juice)
  • 3/4 c light brown sugar
  • 3/4 c dark brown sugar
  • 3 Tbsp honey
  • 1/8 c maple syrup
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp paprika
  • pinch of allspice
  • pinch of cayenne flakes
  • 1/4 c turbinado sugar in the raw

Instructions

  • Prepare smoker for indirect cooking at 275 degrees.
  • Unwrap the ham & place on prepared pan & place in the smoker meat side down so they sit upright.
  • Smoke for 2 hours.
  • Combine all ingredients except turbinado sugar into a bowl & mix thoroughly to make the glaze.
  • Cover ham with glaze after 2 hour smoke mark – making sure it gets in between as many slices as possible.
  • Smoke for 1 more hour with glaze on ham.
  • After 1 hour, generously sprinkle the turbinado sugar over the ham.
  • Increase smoker temperature to 325 and cook ham for another 30 minutes.
  • Remove ham from smoker and place an aluminum foil tent over the ham and allow to sit/cool for 45 minutes.
  • Cut ham (around spiral bone) and serve.
  • Can be in the refrigerator fo 5-7 days or can be froze.
