Ingredients for Jello:
- 1 large pkg (6 oz) lemon jello
- 2 cups 7-Up (or Sprite)
- 3 large bananas, diced
- 2 cups drained crushed pineapple
- 1 1/2 cups mini marshmallows
Ingredients for Topping:
- 1/2 cup pineapple juice
- 1/2 cup sugar
- 1 beaten egg
- 2 Tbsp flour
- 2 Tbsp butter
- 1/4 tsp lemon juice
- 1 cup whipped cream
- 1/4 cup sugar (to taste)
- dash of vanilla
- 1/2 – 1 cup shredded cheddar cheese
Instructions
- Add your lemon jello mix to 2 cups boiling water, then let cool.
- Add into your jello mix your 2 cups 7-Up (or Sprite) and cool until mixture begins to set up.
- Then add in your diced bananas, drained crushed pineapple and marshmallows.
- Pour into your 9×13 dish and let set in the refrigerator.
- In a saucepan combine your pineapple juice, sugar, egg, flour, butter and lemon juice until the mixture thickens. Let that cool in refrigerator.
- Mix in a bowl your whipping cream, sugar and vanilla until just past soft peak stage.
- Once cool, fold in your thick pineapple juice mixture into your whipped cream until combined.
- When completely set, top your jello with your whipped cream mixture. Spread for an even layer.
- Top with shredded cheese. Store in refrigerator.
