Ingredients for Jello:

  • 1 large pkg (6 oz) lemon jello
  • 2 cups 7-Up (or Sprite)
  • 3 large bananas, diced
  • 2 cups drained crushed pineapple
  • 1 1/2 cups mini marshmallows

Ingredients for Topping:

  • 1/2 cup pineapple juice
  • 1/2 cup sugar
  • 1 beaten egg
  • 2 Tbsp flour
  • 2 Tbsp butter
  • 1/4 tsp lemon juice
  • 1 cup whipped cream
  • 1/4 cup sugar (to taste)
  • dash of vanilla
  • 1/21 cup shredded cheddar cheese

Instructions

  • Add your lemon jello mix to 2 cups boiling water, then let cool.
  • Add into your jello mix your 2 cups 7-Up (or Sprite) and cool until mixture begins to set up.
  • Then add in your diced bananas, drained crushed pineapple and marshmallows.
  • Pour into your 9×13 dish and let set in the refrigerator.
  • In a saucepan combine your pineapple juice, sugar, egg, flour, butter and lemon juice until the mixture thickens. Let that cool in refrigerator.
  • Mix in a bowl your whipping cream, sugar and vanilla until just past soft peak stage.
  • Once cool, fold in your thick pineapple juice mixture into your whipped cream until combined.
  • When completely set, top your jello with your whipped cream mixture. Spread for an even layer.
  • Top with shredded cheese. Store in refrigerator.

  • Brings me back to my Grandma’s dinner table every time I eat this!  Classic!
