Queso Blanco
Ditch the store-bought and make your own queso blanco magic! This simple recipe unlocks the secrets to creating fresh, creamy cheese perfect for:

Ingredients
- 12 oz evaporated milk (1 can)
- 1 Tbsp cornstarch
- 3/4 lb white american cheese (Buy it sliced at the deli counter at your grocery store. Then chop into small squares, finely chopped)
- 4 oz mozzarella cheese, shredded
- 2 Tbsp canned jalapenos chopped, or chopped green chiles (I used 1 small can of green chiles)
- 1 tsp chili powder you could also use cumin if you prefer that taste
- 1/4 tsp ground nutmeg
- 1/4 tsp cumin
- 1/2 tsp onion powder
- 1 teaspoon red pepper flakes
- 1/2 tsp diced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- chopped cilantro tomatoes, and jalapenos for garnish
Instructions

Heat Milk and Cornstarch: In a small saucepan over medium-high heat, warm the evaporated milk. Whisk in cornstarch until smooth.

Simmer and Add Cheese: Bring the milk mixture to a simmer (small bubbles around the edges). Immediately reduce heat to low. Gradually add white American cheese, whisking constantly until each batch is melted and creamy.

Add Mozzarella: Once all the white American cheese is melted, add shredded Mozzarella. Whisk constantly until melted and the mixture is smooth and creamy. Add more Mozzarella if desired for a thicker queso.

Stir in Seasonings: Stir in jalapeños (or green chiles), chili powder, nutmeg, onion powder, cumin, red pepper flakes, and salt and pepper.

Broil (Optional): For a slightly browned top, pour the queso into a skillet and broil for 3-4 minutes, or until the cheese begins to bubble and brown.

Serve: Top with cilantro, diced tomatoes, and additional jalapeños (optional).
