Mexican Burger

Ingredients
Ingredients for Burger:
- 2 lbs ground chuck
- 1 tsp of each of these spices: salt, pepper, garlic powder, paprika, cumin
- 1/3 cup bread crumbs
Ingredients for Green Chile Sauce:
- 3 Tbsp vegetable oil
- 1 cup onion, chopped
- 3 garlic cloves, minced
- 2 Tbsp flour
- 1 1/2 cup roasted, peeled & seeded, chopped mild green chiles
- 1/2 c roasted, peeled & seeded, chopped hot green chili
- 1/2 tsp cumin
- 1 tsp Mexican oregano
- 2 cup chicken stock
- 1 tsp salt
Ingredients for Refried Beans:
- 1 large can (28 oz) refried beans
- 1 tsp cumin
- 1 tsp oregano
- 2 Tbsp bacon grease
- 1/2 cup sour cream
- salt & pepper to taste
- chicken stock (if too thick to help thin it down)
Ingredients for Black Beans:
- 1 tsp olive oil
- 1/2 cup chopped onions
- 3 cloves garlic, minced
- 1 can (16 oz) black beans, do NOT drain
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1/2 tsp salt
Ingredients for Guacamole:
- 2 large ripe avocados
- 1 Tbsp cilantro, chopped
- juice of 1/2 lime
- salt & pepper to taste
Ingredients for Pico de gallo:
- 3 large ripe tomatoes, finely chopped
- 1/4 cup sweet onion, chopped
- 1/2 cup fresh parsley, finely chopped
- 1 tsp lime juice
- 1/2 red chili (finely chopped & remove seeds if you don’t like it hot)
- salt & pepper to taste
Additional Toppings:
- Chicharrones
- Shredded lettuce
- Sour cream
- Ranch dressing
- Sliced jalapeno peppers
- Shredded cheddar cheese
Instructions
Green Chile Sauce:
- Heat oil & add onion. Cook about 5 minutes and add garlic.
- Cook another minute & stir in flour. Cook for 1-2 minutes stirring so flour doesn’t burn and also so that it cooks and you don’t get the floury taste.
- Add chilies. Pour in stock & seasoning. Taste for salt & adjust if necessary.
- Bring to a boil over medium heat & cook for about 15-30 minutes on a low simmer covered.
- If you want it thinner, add more broth or water. This can cook longer if you want your chile a softer texture.
- If you don’t want the chunky texture – use an immersion blended to make it smooth.
Black Beans:
- In a small sauce pan, heat the olive oil over medium heat. Add the onions and garlic and cook for 3-4 minutes, just until the onions begin to soften.
- Add the undrained black beans, cilantro, cumin and salt. Stir well and reduce heat to medium low. Allow to cook for 15-20 minutes, stirring occasionally. Taste & adjust seasonings to your liking.
Guacamole:
- Remove the avocado flesh from the skin and mash with the lime juice, salt & pepper. Set aside until you’re ready to plate & serve.
Pico de gallo:
- Combine all the ingredients and mix through. Set aside until you’re ready to plate & serve.
Refried Beans:
- Cook bacon in a sauce pan until crisp. Take bacon out on paper towel to drain but reserve the bacon grease for the refried beans.
- Add refried beans & seasonings. Heat and whisk until blended. Taste for seasonings.
- Add sour cream for consistency and flavor. Stir in chicken broth if mixture gets too thick. Keep warm until ready to plate & serve.
Burgers:
- In a mixing bowl, add in your burger with spices and spake into eight 1/4 lb patties. (I shaped them a bit longer as they will go into a folded tortilla.)
- In a hot cast iron skillet, add patties without crowding. Season again and cook for approximately 2-3 minutes on each side until browned.
Assembly:
- Preheat oven on broil setting.
- Heat tortillas in a moist paper towel. Prepare a sheet pan with parchment paper.
- Dip your tortilla so both sides are covered in your green chili sauce. Place that on your parchment paper and add a spoonful of your refried bean mixture to half of your tortilla – top with one of the burger patties. Fold over the top part of your tortilla and top with shredded cheddar cheese.
- Place in oven on broil until cheese is melted (watch so it does not burn).
- Get your plate ready by adding a few spoonfuls of the green chili sauce. Put your tortilla burger on top of the sauce.
- Add your toppings of black beans, pico de gallo, guacamole, bacon bits and crushed chicharrones and any other additional toppings of your choice (sour cream, ranch dressing, jalapeno peppers, cilantro, scallions, lettuce, tomato, etc).
Notes
- If you like your food more spicy – feel free to add in peppers to your burger, beans, guacamole, pico de gallo and or sauce to make it spicier!
