Ingredients

Scale

1/3 cup shredded cheese of choice (we used cheddar)
1–2 eggs, split yolk from whites
salt & pepper to taste
chopped chives, optional

Cook Mode Prevent your screen from going dark

Instructions

Have items all ready by your side as this goes quickly!
On your cooktop, turn burner to medium high heat. Once hot, put shredded cheese in pan, spreading around a bit to form a “crust”.
Once fully melted but not browning yet, carefully pour egg WHITE (white only – not the yolk) over the cheese. Top with lid to help contain heat & cook through.
Once whites are almost fully cooked, carefully pour yolks on top of whites. Put lid on again to finish cooking. Cook just enough until whites are fully cooked.
Season to taste with salt & pepper. Garnish with any sides you desire.
Plate & enjoy!

Notes

We used “Everything But the Bagel” seasoning to replace our salt and sliced avocado. Feel free to mix it up with whatever you enjoy with it.
