Ingredients

Scale
  • 1/3 cup shredded cheese of choice (we used cheddar)
  • 12 eggs, split yolk from whites
  • salt & pepper to taste
  • chopped chives, optional

Instructions

  • Have items all ready by your side as this goes quickly!
  • On your cooktop, turn burner to medium high heat.  Once hot, put shredded cheese in pan, spreading around a bit to form a “crust”.
  • Once fully melted but not browning yet, carefully pour egg WHITE (white only – not the yolk) over the cheese.  Top with lid to help contain heat & cook through.
  • Once whites are almost fully cooked, carefully pour yolks on top of whites.  Put lid on again to finish cooking.  Cook just enough until whites are fully cooked.
  • Season to taste with salt & pepper.  Garnish with any sides you desire.
  • Plate & enjoy!

Notes

  • We used “Everything But the Bagel” seasoning to replace our salt and sliced avocado.  Feel free to mix it up with whatever you enjoy with it.
