Ingredients
- 1 1/2 cups well-mashed ripe bananas (3 large)
- 1/4 cup canola oil (may substitute vegetable or avocado oil)
- 1/4 cup unsalted butter melted and cooled
- 1/2 cup sugar
- 1/2 cup light brown sugar, tightly packed
- 2 large eggs, room temperature
- 1/4 cup buttermilk, room temperature
- 1 Tbsp vanilla extract
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Streusel/Crumble (optional)
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 tsp salt
- 1/4 cup unsalted butter, cold
Maple Glaze (optional)
- 1 heaping cup powdered sugar, sifted
- 3 Tbsp Maple Syrup
- 1 Tbsp Maple Extract
- 1 Tbsp hot water
Instructions

Prepare for Baking: Preheat your oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners.

Mash Bananas: In a large bowl, place the peeled bananas. Use a fork or potato masher to mash them thoroughly until mostly smooth.

Combine Wet Ingredients: Add the oil and melted butter to the mashed bananas and stir well to combine. Stir in both the granulated and brown sugars until well incorporated. Add the eggs, buttermilk, and vanilla extract, and stir until the wet ingredients are just combined. Set aside.

Whisk Dry Ingredients: In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt until evenly distributed.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet batter, gently folding them in with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

Prepare Streusel Topping: In another medium bowl, combine the flour, brown sugar, and salt. Use a fork to stir these dry ingredients together. Cut in the cold butter using a pastry cutter (or your fingertips) until the mixture resembles coarse crumbs and the butter is well incorporated.

Assemble and Top Muffins: Divide the muffin batter evenly among the prepared muffin liners, filling each about ¾ full. Sprinkle the streusel topping evenly over the batter in each muffin cup.

Bake the Muffins:
- Place the muffin tin in the preheated 425°F (220°C) oven and bake for 8 minutes.
- Without opening the oven door or removing the muffins, reduce the oven temperature to 350°F (175°C) and continue baking for another 7-8 minutes.
- To check for doneness, insert a toothpick into the center of the largest muffin. It should come out clean or with a few moist crumbs attached (no wet batter).

Cool the Muffins: Allow the muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- Prepare Glaze (Optional): While the muffins are cooling, whisk together all the glaze ingredients in a small bowl until smooth. Once the muffins are slightly warm, drizzle the glaze evenly over the tops. Enjoy!
Notes
- Note this makes 15 muffins – not just 12 like most recipes.
- Feel free to add nuts, chocolate chips (I wouldn’t do a maple glaze if adding chocolate) or omit the drizzle and just have the crumble…. or no crumble at all! These are so good!
