- 6 cups coarsely chopped broccoli (4 large crowns)
- 3/4 cup dried sweetened cranberries
- 1/2 cup sliced almonds
- 1/2 cup shelled, roasted and salted sunflower seeds
- Optional: feta cheese, add to preference
Dressing
- 2/3 cup full-fat mayonnaise
- 1/4 cup EACH: whole milk, heavy cream & white sugar
- 2/3 Tbsp apple cider vinegar
- 2 tsp EACH: lemon zest & poppy seeds
- salt & pepper to taste
Instructions
- Chop Broccoli: Discard the tough stems from the broccoli and finely chop the florets into small, uniform pieces.
- Assemble Salad: Transfer all your prepped salad ingredients into a large mixing bowl.
- Whip Up Dressing: Grab a small blender bottle or jar and add all dressing components excluding the poppy seeds. Blend until you achieve a smooth consistency. Taste and adjust seasonings as desired, then stir in the poppy seeds.
