Ingredients
Egg Mixture
- 7 extra large eggs
- 1 Tbsp fresh chives
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
Bechamel
- 1 cup warm milk
- 60 g butter (around 4 Tbsp)
- 5 Tbsp all purpose flour
Other Ingredients
- Puff pastry sheets – cut just larger than the ramekins you will be baking them in
- 1 cup roughly chopped baby spinach
- 1 cup shredded fontina cheese
- 1/2 cup gruyere cheese
- 5 slices of bacon
- 1/2 cup bell pepper
Instructions
- Prep Veggies & Eggs: Roughly chop spinach and dice bell peppers; set aside. Whisk 7 eggs with salt, pepper, cayenne, and chives for 2 minutes; set aside.
- Create Béchamel: Melt butter in a pot, stir in flour for 1 minute, then add milk and cook until boiling and thickened.
- Integrate Eggs: Temper 1-2 tablespoons of egg mixture with 1 tablespoon of béchamel in a small bowl, then whisk back into the main béchamel. Whisk in the remaining egg mixture until smooth and creamy.
- Fold in Fillings: Stir spinach, bell peppers, and cheeses into the béchamel-egg mixture.
- Assemble Ramekins: Grease ramekins well. Line each with a 4-5 inch puff pastry square, allowing edges to hang over.
- Fill & Top: Divide egg mixture among ramekins, filling almost to the top. Add more cheese and one bacon slice to each.
- Bake: Sprinkle with black pepper. Bake at 385°F (195°C) for 30-35 minutes, or until golden and puffed.
- Enjoy: Serve warm.
