Ingredients

  • 2 pounds lean (85/15) ground beef
  • 1 teaspoon sea or Himalayan pink salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 4 brioche buns, split and toasted
  • 1/2 cup jalapeño relish (optional)

Blueberry Sauce

  • 1 cup frozen or fresh blueberries
  • 1 1/2 teaspoons balsamic vinegar
  • 1 1/2 teaspoons honey
  • 3/4 teaspoon vanilla
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper, plus more to taste
  • 1/2 teaspoon fresh thyme, finely chopped

Herbed Goat Cheese

  • 4 ounces goat cheese, softened to room temperature
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1/2 tablespoon lemon juice
  • 1 tablespoon fresh chives, finely chopped
  • 1/2 tablespoon fresh parsley, finely chopped
  • Salt and pepper, to taste

Instructions

To Make the Burgers:

  1. Preheat Grill: Preheat your grill to 400°F (200°C).
  2. Form Patties: In a large bowl, combine the ground beef, salt, pepper, and garlic powder. Mix thoroughly, then form into four half-pound patties.
  3. Grill Burgers: Place patties on the preheated grill over direct heat. For a medium burger, cook for 5-6 minutes on one side, then flip and cook for another 4-5 minutes on the other side.
  4. Rest Burgers: Remove burgers from the grill, cover loosely with aluminum foil, and let rest for 10 minutes.

To Make the Blueberry Sauce:

  1. Combine Ingredients: In a small saucepan over medium heat, combine blueberries, balsamic vinegar, honey, vanilla, cornstarch, salt, pepper, and thyme. Stir well.
  2. Simmer Sauce: Bring the mixture to a boil, then reduce heat to low and simmer for 6-8 minutes, or until the berries burst and the sauce thickens slightly. (Note: The sauce will thicken more as it cools.)
  3. Cool Sauce: Remove from heat and let cool slightly before adding to the burgers.

To Make the Herbed Goat Cheese:

  1. Mash Goat Cheese: In a mixing bowl, use a fork to mash the goat cheese until it reaches a spreadable consistency.
  2. Combine & Season: Stir in the olive oil, honey, lemon juice, chives, parsley, salt, and pepper until well combined.

To Assemble the Burgers:

  1. Toast Buns: Lightly toast your burger buns.
  2. Spread Goat Cheese: Spread the prepared herbed goat cheese onto both the top and bottom halves of the toasted buns.
  3. Layer & Serve: Place a burger patty on the bottom bun. Top generously with the blueberry sauce and jalapeño relish. Add the top bun and enjoy your gourmet burger!
